How many times do I have to say it? "A proper lobster/crab roll is served in a top-split hot dog bun that has been buttered and grilled." I rescind this commandment with regard to Muscongus. I am fairly confident that someone home bakes the rolls. They are pretty dense, but flavorful, especially when perfectly buttered and grilled. It does throw off the LTB Ratio ( LTB Explanation), but not in a bad way. Look at the photo of the roll. Note how perfect the butter tan is on the roll! You'll also see a little speck of green in the lobster salad. That's a tomalley stain, that indicates freshly shucked meat without overprocessing. Tomalley Definition
The lobster salad had meaty chunks with just a whisper of mayo. I have two criticisms:
1) What is up with the paprika on the top? Lobster is so subtle and any outside flavors can mess it up.
2) The meat just didn't have that Waterman's Beach sweetness, and if it did, the paprika messed it up.
The place has a limited menu: lobster, clams & corn, and is situated on a working wharf with beautiful views. There are always a lot of families with tablecloths & wine glasses from home. They order 3 lobsters a piece and supplement it with their own sides. I see a lot of wine in a box.
Fix the paprika and Muscongus is in the mid-coast top 10. As far as a steamed lobster goes the place can't be beat for price and quality. Although the Muscongus Lobsterman's Coop across the street is a little cheaper, it has less of a view.
